This is a recipe I came up while playing around with another recipe and it turned out to be excellent! It is another big favorite at work, with folks fighting over them when I bring them in. While I think pecans are the perfect nut for this, you may want to try substituting something else. Enjoy!
3/4 cup softened butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 tsp. vanilla
1 3/4 cup flour
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 cup broken pecan pieces
Cream the butter and two sugars until fluffy. Beat in the egg and vanilla. Fold in the remaining ingredients and mix well. Taking about 2 tbsp. of dough, roll into a ball and place on an ungreased cookie sheet. Bake in an oven preheated to 375 degrees for about 10 minutes. Cookies will puff into a little ball and when done will look dry and just barely starting to color around edges. Allow to cool on the cookie sheet a few minutes before removing to finish cooling on a rack. Makes about 2 dozen cookies. You can made them smaller if you wish and the baking time would be slightly less.
