My friend Kevin in Kansas City makes the absolute best guacamole you ever tasted. This morning he sent me the recipe and I want to share with it everyone.
Avocados are one of the healthiest things you can eat. And this guacamole contains not only avocados, but other things that are very good for you, so you can feel good about eating something that is not only delicious, but also good for you. Here is a site that tells you some of the wonderful things about avocados. I like to eat this guacamole smeared on a piece of toasted bread or a bagel for a snack or light meal. So enjoy!
Kevin's Guacamole
4 avocados, smashed but with some chunks
the juice of 2 large limes
2 serrano pepper, seeded and finely chopped
1 medium red onion, peeled and finely chopped
2-3 cloves of garlic, peeled and finely chopped
1 bunch cilantro, chopped
2 tomatoes, chopped
sea or kosher salt to taste
Pour the lime juice over the avocados, then fold in the remaining ingredients. To keep the dip from turning brown, add 3 of the avocado pits to the dip. I don't know why that works, but it does.
