Rhubarb Relish

Not sure where I got this one, but it is good!

2  cups finely chopped rhubarb
2 cups finely chopped onion
2 1/2 cups brown sugar
1 cup vinegar
1 tsp salt
1/2 tsp cinnamon
1/2 tsp allspice
1/4 tsp cloves
1/4 tsp black pepper

Combine all ingredients in a Dutch oven and cook over medium heat about 30 minutes, stirring often, until thickened.   Cool, then put in jars and store in the refrigerator for up to a month.   Is a good condiment with roasted meats.
