Oatmeal Raisin Cookies

For years I thought I hated oatmeal raisin cookies.   Someone I worked with requested I make some for him so read several recipes and combined ideas from them all into one recipe.   They turned out perfect!    Some of the folks at work even say they are the best oatmeal raisin cookies they've ever eaten.   Here you go.



1 cup butter, slightly softened
1 cup packed dark brown sugar
3/4 cup white sugar
2 eggs
1 heaping tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. ginger
1/2 tsp. cloves
1/2 tsp. ground coriander (optional)
1 tsp. baking soda
1 tsp. salt
3 cups rolled oats (old fashioned)
1 3/4 cup flour
2 cups raisins

Cream the butter and two sugars until well blended. Beat in the eggs and spices. Finally stir in the rest of the ingredients and mix well. Using a 2 1/2 tbsp. scoop, form into balls and place about 2 inches apart on a cookie sheet. Bake at 350 degrees about 10 minutes or so, until the bottoms of the cookies are just starting to brown and the tops are just barely coloring. Allow to cool on the cookie sheet about 5-10 minutes before removing to a rack to finish cooling. Makes about 3 dozen cookies.
For an interesting variation, use dried cherries in place of the raisins.   You may never use raisins again once you do!   Enjoy
