Honey Spice Cookies

An old favorite of mine that I hadn't made in years.   Honey spice cookies combines several favorites...honey, brown sugar, butter and lots of spices.   It is a rich and slightly chewy cookie.   Enjoy!

1 cup softened butter
1 cup brown sugar, packed
2 eggs
1/2 cup honey
1 tsp. vanilla
3 1/2 cups flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. each cloves, allspice and nutmeg

Cream the butter, brown sugar and honey.   Beat in the eggs and vanilla.   Mix together the dry ingredients, then beat into the wet mixture.   Mix well and then chill for at least an hour, two hours is better and even overnight will work.   Form the dough in balls using a 2 tbsp. scoop.    Place on an ungreased cookie sheet and bake at 350 degrees 10-12 minutes or until lightly browned.    Allow to cool on the cookie sheet for a bit, then remove to a rack to finish cooling.   Makes about 3 1/2 dozen cookies.   

Optional:   If you like ginger, you can add about 1 tsp. ground ginger, however I find that it tends to overpower the honey flavor.
