Hot Water Sponge Cake

If you need something sweet and easy in a hurry, then this is the cake for you.   You can frost it, you can simply sprinkle it with some powdered sugar or, my favorite, top it with fresh fruit.

1 1/4 cups flour
1 1/2 tsp. baking powder
1/2 tsp. salt
3 eggs
3/4 cup white sugar
1/3 cup very hot water
1 tsp. vanilla extract
1/2 tsp. almond extract

Preheat your oven to 350 degrees, then butter and flour an 8 or 9 inch square cake pan.   Sift together the flour, baking powder and salt.   In a deep bowl, beat the eggs until very thick and lemon colored.   Gradually beat in the sugar.   When all is incorporated, add the flavorings and hot water in small amounts, beating at low speed.    Finally, gently fold in the dry ingredients and mix thoroughly.    Pour the batter into the pan and bake for 25-30 minutes or until golden brown and it pulls slightly away from the sides of the pan.    Allow to cool completely before frosting or cutting.    Enjoy!
