Garlic and Cheese Biscuits

One of my favorite places to eat is Red Lobster and a high point of a visit there are their garlic and cheese biscuits.   After searching a bit online, tweaking and playing, I've come up with a pretty good imitation of those delicious biscuits.  Here you go!

1 3/4 cup flour
1/2 tsp. salt
1/2 tsp. baking powder
(if using buttermilk, 1/4 tsp. baking soda)
5 tbsp. butter
1 cup milk (or buttermilk)
1 cup shredded cheddar cheese (or 1/2 cup cheddar and 1/2 cup shredded parmesan)

1/4 cup melted butter
1/4 tsp. garlic powder (or more if you like a more garlicy biscuit)

Preheat the oven to 450 degrees.    Blend together the flour, baking powder, (baking soda if using) and salt.   Cut the butter into the dry ingredients, making coarse crumbs.   Make a well in center and add the milk (or buttermilk) and grated cheese.   Stir together quickly as possible.   Drop batter by heaping spoonfuls on an ungreased baking sheet.    Bake in the preheated oven about 12-15 minutes or until risen and lightly browned.   Mix the melted butter with the garlic powder and brush over the baked biscuits as soon as they come out of the oven.   Enjoy! 

P.S.  I guarantee you can't eat just one!   Oh, and if you want to tweak it a bit more, add some dry Italian herbs to the dry ingredients for a nice change.

Just a note to apologize for neglecting the blog for so long.   When it gets  hot like this (we had temps of up to 106 F/41 C this past week.) I tend not to do a whole lot of cooking.   Rather I eat things like cottage cheese, hummus, fresh fruit, raw vegetables or go out.    But this weekend I'll try to post a few things, just so you folks won't think I've forgotten you!   Have a great weekend!

Kevin's Guacamole

My friend Kevin in Kansas City makes the absolute best guacamole you ever tasted.   This morning he sent me the recipe and I want to share with it everyone. 

Avocados are one of the healthiest things you can eat.   And this guacamole contains not only avocados, but other things that are very good for you, so you can feel good about eating something that is not only delicious, but also good for you.    Here is a site that tells you some of the wonderful things about avocados.   I like to eat this guacamole smeared on a piece of toasted bread or a bagel for a snack or light meal.    So enjoy!

Kevin's Guacamole

4 avocados, smashed but with some chunks
the juice of 2 large limes
2 serrano pepper, seeded and finely chopped
1 medium red onion, peeled and finely chopped
2-3 cloves of garlic, peeled and finely chopped
1 bunch cilantro, chopped
2 tomatoes, chopped
sea or kosher salt to taste

Pour the lime juice over the avocados, then fold in the remaining ingredients.   To keep the dip from turning brown, add 3 of the avocado pits to the dip.   I don't know why that works, but it does.
