2 cups flour
1 1/2 cup white sugar
1 1/2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 20-oz can crushed pineapple, with juice
2 eggs
1/2 cup vegetable oil
1 tsp. vanilla extract
1 tsp. pineapple extract
Mix dry ingredients
together well, then beat in the remaining ingedients. Spoon into
greased pan and bake 30-35 minutes or until a toothpick stuck in the
center comes out clean. Cool well before cutting, may frost with
cream cheese frosting if desired.
